Chickpea Peanut Butter Fudge

Name a better duo than chocolate and peanut butter– It’s impossible.
My favorite late night snack is always a heaping spoonful of ooey gooey peanut butter with a few dark chocolate chips sprinkled in. With that golden combo in mind, I whipped up some fudge to satisfy both my insatiable sweet tooth and my borderline peanut butter addiction (seriously it’s hard to name things I love more than peanut butter). These fudgy squares will sneak fiber, protein, and good fats into each delectable bite!
Ingredients *serves 12*
- 1/2 cup of organic honey
- 1/2 cup of organic peanut butter
- 1/4 cup of PB2 (powdered peanutbutter)
- 15 oz. can of chickpeas (garbanzo beans)
- 1/4 cup of almond flour
- 1/2 cup of chocolate chips
- 1/2 tsp of vanilla extract
- 1/4 tsp of baking powder
- 1/4 tsp of baking soda
- dash of salt
Preheat oven to 350°
Grease a 13×9 inch pan with your oil/butter of choice (I used Nature’s Promise coconut oil cooking spray)
Strain excess liquid from chickpeas before beginning
Add all ingredients except chocolate chips to a powerful blender or food processor
Blend until consistency is smooth
Mix in chocolate chips by hand
Pour batter into pan and bake for 15 minutes
Allow to cool and enjoy!
